Wilcox has flourished as the owner and chef of Kendra’s Kitchen Natural Foods, Inc., located in the scenic Colorado town of Telluride. Through her culinary business, she has served as a personal chef for fashion designer Ralph and Ricky Lauren, supermodel Christie Brinkley and the publishers of TIME Magazine, Kelo and Jo Sutton. Creating fantastic Southwest French fusion cuisine, Ms. Wilcox has adapted premier French recipes into healthier, lighter dishes that have satisfied myriad customers. She also expanded her services as a catering company to several entities, such as weddings, private jet cuisines, farmer’s markets and sporting events. Additionally, she has donated her culinary acumen to various charitable endeavors. Furthermore, Ms. Wilcox established Mountain Meadows Retreat in 2020 during the coronavirus pandemic to create a unique venue site for weddings, parties, family reunions and other celebrations. She also hosts an Airbnb location, Rocky Mountain Rental Retreats, which offers lodgings with cooking classes, barbeques and gourmet dining. She has won numerous culinary competitions, including Mt. Living’s Art & Architecture in 2017, and was a finalist at the New Mexico Fiery Food Challenge and London Specialty Food Show in 2004. Samana M. Zaidi grew up working with her father, with whom she traveled across the world with his importing and exporting business. Learning about heavy machinery and technology, she expanded her expertise into the retail franchise before establishing her own importing and exporting business. As time progressed, Ms. Zaidi delved into the food industry in the 1980s. She notes that she has always had an entrepreneurial spirit and has never been afraid to find new endeavors. Since 2005, she has excelled as the owner of Thai Pan Restaurant in Leesburg, Virginia. At Thai Pan Restaurant, Ms. Zaidi is proud of the fresh, healthy food she brings to her customers, and emphasizes that her restaurant is a small, family-owned business that is seldom seen in America. In her position as owner, she enjoys bringing new flavors to the table and introducing her customers – especially children – to authentic cuisine. Recently, she established a new dish titled “Curry in a Hurry,” a homecooked Indian dish. Additionally, she is in the process of introducing new Indian and Thai sauces that can be bottled and sold.
