Lilydale, VIC, Australia W hile ice cream trucks have driven around neighborhoods delivering frozen confections to children for decades, the past few years have seen food trucks catering to consumers with more adult palates rise in popularity as more people search for affordable, healthy and quick food to grab on the go. Michael J. Coombe, a former nurse and real estate agent, capitalized on this surge by opening a mobile food truck of his own, through which he sells coffee and other convenient items. Besides overseeing daily operations, he also takes on catering jobs for major events, weddings and sporting activities. Currently running the business with his wife, Mr. Coombe enjoys the camaraderie of their partnership and the freedom to operate on their own terms. Though they are able to deliver fresh, good-tasting food in a relatively small amount of time, they are committed to maintaining a high standard of quality, refusing to take any shortcuts that might compromise their reputation. It is this work ethic that allowed Mr. Coombe to experience success in both nursing and real estate, and this drive that will hopefully allow him to expand the business in the years to come.
