63 Millennium - A Marquis Who’s Who Magazine P rofessor William E. Artz’s academic endeavors started with two bachelor’s degrees from the University of Wisconsin-Madison. The first was in bacteriology (1972), the second in food science (1973). After a short period in production management at a canning company, he decided graduate school would be more interesting and returned to college. He received a MS in food science at Washington State University in 1978, then a PhD in food science with a minor in analytical chemistry in 1984 (advisor: Prof. B.G. Swanson). He worked with Prof. E.G. Schanus as a post-doctoral scientist for around 6months before starting as an assistant professor at the University of Illinois Urbana-Champaign. Prof. Artz’s academic career at the University of Illinois started in 1984 in the Department of Food Science and Human Nutrition. His research was focused on three subject areas: fat and oil compositional chemistry and processing, fat substitute chemistry and analysis, and supercritical fluids – for chromatographic analysis and processing. A few years after his promotion to Associate Professor, he also served as the Director of Graduate Studies for the Department of Food Science and Human Nutrition. He attained emeritus status in 2012 after amassing 28 wonderful years in the field. When asked of his career highlights, Prof. Artz recalls the time he spent in Brazil and the various cooperative research projects completedwith Brazilian graduate students, scientists and university faculty. He was first invited to Brazil to give a plenary lecture at a food science conference, which resulted in the initiation of several cooperative research programs and projects. Likewise, he is proudest of thework he published in fat and fat substitute chemistry, and supercritical fluid chromatography and technology, whichhas been evidenced in myriad articles in prominent scientific journals and book chapters. A patentee in the field, Prof. Artz has maintained membership with the American Oil Chemists’ Society (AOCS) since 1976, where he served on numerous committees, including the AOCS Governing Board and as associate and senior associate editor of the organization’s journal. In light of his outstanding contributions to education, he was listed in the 22nd edition of Who’s Who in the Midwest in 1989. WILLIAM E.
