261 Millennium - A Marquis Who’s Who Magazine culture. He started his career as a mechanic at the Santa Marta Golf Course and automobile technician at Gerry Lane Chevrolet. Mr. Kimball even owned his own auto shop from 1998 to 2005, but his heart was always with cooking. Mr. Kimball was an aviation machinist AD2 in the U.S. Navy from 1988 to 1992, and Cajun culture was a popular social topic of curiosity. Tracing his ancestry 400 years back to France, Mr. Kimball’s eighth great-grandfather settled the first village in Quebec with 45 different families as the Acadian-Cajuns. With these discoveries, Mr. Kimball decided to take this culture and present it to people outside of Louisiana so they can learn about their culture, history, beliefs and food. In 2005, Mr. Kimball spearheaded Cajun Works, Inc., in Krotz Springs, Louisiana, offering camp- on-the-bayou style Cajun cuisine. Finding great success in his hometown, Mr. Kimball expanded the restaurant to multiple locations in Breaux Bridge, Louisiana, in 2011 and Vidor, Texas, in 2018. Notably, the Breaux Bridge Cajun Works location was named Best Cajun Restaurant in the area. Mr. Kimball is a member of the National Restaurant Association, Texas Restaurant Association, Louisiana Restaurant Association and Better Business Bureau. He attributes his success to the consistency and quality of the product, the truth of the stories and the recent migration of “true Acadian-Cajun” people in the area. Prior to opening his restaurant, Mr. Kimball had a life threatening brain tumor that was eventually removed. Cajun Works Texas restaurant’s mascot is an alligator named “Fraser,” named after the neurosurgeon who removed his tumor. Mr. Kimball feels as though if it was not for Dr. Fraser, he would have never had the opportunity to pursue his restaurant aspirations. R aised in the Atchafalaya Basin of Louisiana, Toby J. Kimball has had a connection to Cajun cuisine and cooking since his youth. The way of life in the swamp was simple with activities such as hunting, fishing and camping, as well as friendship, food and family.
