254 Millennium - A Marquis Who’s Who Magazine J esus Morales grew up in a loving environment surrounded by home- cooked meals, and as he got older, he took a particular interest in cooking with his mother. Today, Mr. Morales is the owner and head chef of La Bella Managua in Toronto, Canada. Since 2005, he has expertly led a team of sensational staff invested in the success of the restaurant. Specializing in Nicaraguan style cuisine, La Bella Managua is one of a kind in Canada and attracts local and international customers. For appetizers, the restaurant offers many varieties of ceviche, calamares, nacatamales and tropical salads. Entrée options include the extra tasty pollo a la parrilla, carne asada, bistec encebollado and more. The restaurant also offers several vegetarian options such as tajadas con queso. Prior to spearheading his business, Mr. Morales worked in the similar field of hospitality, serving as a sous chef and head cook for numerous hotels and restaurants. While studying French in college in Montreal, Canada, he took on his first hospitality role. For 14 years, from 1989 to 2013, he served as a sous chef at Hot House Café. Holding awards from Urban Spoon and Talk of the Town, Mr. Morales attributes his career success to being part of a small community in Toronto and having the ability to share the food of his culture to inhabitants throughout the city. Looking ahead, Mr. Morales hopes to expand his restaurant to more locations in order to spread the sharing of Nicaraguan food and culture. Since commencing his career in the 1980s, Mr. Morales has seen major growth in more multicultural restaurants opening in the Toronto area, and he is happy to see more people trying new food. His philosophy on life is that if you want to be someone influential you must put all of your drive and effort into your desired endeavors. No restaurant is successful without hard work, long hours and dedicated staff members. He believes everyone has a talent, and if they express it properly they can lead an invigorating life.
