165 Millennium - A Marquis Who’s Who Magazine ENTREPRENEURS Growing up with parents who were both restaurateurs in the 1980s, Joshua Lee Keating desired to open his own restaurant to further his family’s legacy. Starting out as an executive chef at various hotels, he eventually established Stacked and Folded in 2015. With locations in Winnetka and Evanston, Illinois, Stacked and Folded is a premier dining experience known for its artisanal sandwiches, fusion tacos and unique salads. Offering dine-in, takeout and delivery services, Stacked and Folded also does special events and catering, as well as opens a patio during the spring and summer months for outdoor dining. With two locations to his credit, Mr. Keating intends to open a third location in the forthcoming future in an effort to create more jobs for his staff. Drawing upon a Bachelor of Arts in advanced culinary arts and business management from Johnson and Wales University and a culinary nutrient degree from Bowman College, Mr. Keating also dedicates his time civically to his local farmers market. Notably, in light of the coronavirus pandemic, he has donated a plethora of food to frontline and health care workers, as well as participates in meal programs for elementary and high schools in his area. From 2016 to 2018, he also sat on the board of directors of the Village of Winnetka. Mr. Keating attributes his success to his passion for the industry, his drive and determination, and his careful compassion for the craft of cooking. He is exceptionally proud of the way his business is operated and credits the hard work of his staff for his restaurant’s success. Placing emphasis on the value of community involvement, he enjoys providing a safe and inclusive environment for staff and customers alike. To attest to his success, Mr. Keating and Stacked and Folded were named the Best Sandwich Shop in 2018, 2019 and 2020. Additionally, he won the Best Girl Scout Cookie competition on the West Coast for his sevenlayer cookie cake in 2006. Ultimately, he would like to be remembered as a grateful, humble and genuine individual, both in his personal and professional life.
