Since receiving her culinary diploma, Ms. Kirstein has specialized in a variety of French dishes and pastries, as well as other meals with roots in Italy, Mexico, Germany, Morocco and Cuba. For more than 20 years, Ms. Kirstein has excelled as a chef and the owner of Mazzu’s Catering. With her catering business, she offers high-end international cuisine throughout the Hamptons, New York, and New York City. In light of her efforts and success, Ms. Kirstein was selected as the Hamptons’ Best Caterer by Dan’s Papers on more than 10 different occasions. She attributes her immense success to her work ethic and ability to market her culinary services to a diverse range of clientele. Recognized across New York for her spice infusions and unique cooking style, Ms. Kirstein intends to diversify her range of desserts in the forthcoming future, which will include wedding cakes for upscale events. CHEF Mazzu’s Catering Southampton, NY Growing up, Jermaine J. Paddio Sr. spent time with his grandfather, who owned three acres of gardens and grew fruit, vegetables and spices. Thus, Mr. Paddio was introduced to the culinary arts. Drawing upon this formative influence, he established Shells and Tails 2 Geaux in 2016, where he serves as owner and operator. Notably, Shells and Tails 2 Geaux offers authentic Cajun seafood and Creole cuisine, which has been acclaimed throughout the State of Texas. It has been recognized among the Newest and Hottest Trending Cajun Spots in the Dallas-Fort Worth Area by the Dallas Observer, as well as among the Top 10 Best Cajun Spots by Dallas Morning News. Supported by a BBA from the University of Louisiana at Lafayette, Mr. Paddio previously served as a patrol engineer with Halliburton from 2010 to 2016, where he was involved with extracting natural gas and oil, known as fracking. Although he enjoyed the profession, he desired to spend more quality time with his family, which led him to opening his own local food business. Mr. Paddio also spent six years with the Army National Guard, through which he earned several commendations.
