Well-qualified in her field, she is a certified health coach and completed a certification program in plant-based nutrition. She also holds a certificate of completion in the Food for Life Program from the Physicians Committee for Responsible Medicine. Additionally, she studied the power of the mind under the mentorship of Glynn Braddy, an educator from Australia whose teachings were integral to her development. Prior to embarking on her career in health coaching, Ms. Mathison was a franchise owner for Snelling and Snelling, Inc., and a teacher for Tai Chi Dragon Qigong since 2002, which she continues to teach. Additionally, she was a lecturer for community colleges and hospital outreach programs. In 1982, she was honored as Idaho's Business Woman of the Year. She relocated to Seattle, Washington, and assumed a role as a bank officer for Old National Bank in 1983. Ms. Mathison is a proud breast cancer survivor who notes that she struggled with obesity from age 9 until she was 63 years old. As such, she was inspired to pivot her career focus to support her nutrition philosophy, seeking to empower others through the program. Although she grew up on a dairy farm, she transitioned to a vegan diet and began crafting whole-foods recipes to support her health. Since 2007, she has been the president, certified health coach and Food for Life instructor for Nutritious Way. Under the supervision of the Physicians Committee for Responsible Medicine, she provides classes on weight, cancer and diabetes management, and programs for children's health and wellness. She also lends her nutritional expertise as a vegan cook and instructor and was featured in the article "Don't Eat That!!", written by Laurie Nelson-Barker and published in the View on Southern Utah Magazine in 2014.
