CORDOVA Founded in 1967, The Original Chubby’s Mexican Food is an authentic Mexican cuisine restaurant with three locations in Colorado. A family-owned business, Julian T. Cordova has excelled as the owner since 1984, having been the seventh generation individual in his family to manage the restaurant. Thriving in the restaurant industry for over five decades, The Original Chubby’s Restaurant has maintained its success due to its homemade family recipes that have been passed down in Mr. Cordova’s family for years. Impressively, Mr. Cordova’s restaurant was featured in Westward and has earned a myriad of accolades. Attributing his success to the rapport he and the restaurant have fostered with their customers, Mr. Cordova is especially proud of his and his restaurant’s status as a staple in their local community. Working by the restaurant’s motto, “Gotta get my Chubby’s,” he intends to expand The Original Chubby’s Mexican Food in the forthcoming years. Ultimately, he wishes to open more locations and potentially franchise the business. Mr. Cordova has nine children and 18 grandchildren. Notably, four of his children have already joined him in running the restaurant. With nearly four decades of professional experience to his credit, Jerry Kill has cultivated a career of excellence as a collegiate athletic coach. Since 2021, he has served as the head football coach at New Mexico State University. Over the course of his career, Mr. Kill has operated at numerous universities throughout the United States, such as Virginia Tech, Kansas State University, Southern Illinois University and Pittsburg State University, where he has utilized his tactical knowledge of football as a head coach, defensive and offensive coordinator, and athletic director. Throughout his tenure as a coach, Mr. Kill has won 13 state championships, and he was inducted into the Kansas Sports and Southern Illinois University Halls of Fame. Much of his experience has been captured in his book, “Chasing Dreams: Living My Life One Yard at a Time,” which was published in 2016. Prior to embarking on his vocational journey in 1985, he pursued a formal education, earning a bachelor’s degree at Southwestern College in Winfield, Kansas. In light of his fulfilling career, Mr. Kill is especially proud to have established a cancer foundation at Southern Illinois University. JERRY KILL
