The establishment is a dedication to Mr. Pilsbury’s late wife, Alexandra, and was named in her honor. Early in his career, Mr. Pilsbury lived and worked in New London, an area known for its luxe clientele and high-end eateries. He began working in kitchens and restaurant management at a country club before becoming sous chef at The Coach House Restaurant at the New London Inn, an intimate fine dining establishment located in a historic boutique hotel. Under the tutelage of executive chef and professional mentor, Chef Joshua Duda, Mr. Pilsbury developed his skills as a chef and refined his approach to menu development and management, prioritizing local ingredients, partnerships with regional producers, and creating a sustainable spin on classic recipes. Since opening in 2022, Alexandra’s Bistro has been nominated for several Best of Concord restaurant awards and will be featured in an upcoming episode of America’s Best Restaurants. Mr. Pilsbury strives to connect with the community through charitable outreach. Likewise, he remains dedicated to serving as an example of the benefits that can be found in fresh, local food. Mr. Pilsbury considers opening Alexandra’s Bistro to be his greatest accomplishment, and he credits his success to the early inspiration of his mother, a gregarious host and adventurous scratch cook. Furthermore, he is grateful for the lessons he learned during his time under Joshua Duda. He considers success to be an attitude of non-complacency, and he looks forward to continuing to grow as a manager, a creative, and a pillar of the regional business community in the coming years.
