87 Millennium - Twentieth Edition HOSPITALITY AND LEISURE Anthony J. Capua IV is a rising leader in hospitality and business management. Since 2023, he has served as the executive chef at Brentwood Country Club, where he oversees all culinary operations within the club. To wit, he primarily manages an a la carte restaurant that runs three meals a day and a cafe and snack bar that operate for two periods each day. Mr. Capua also handles various administrative duties as needed, collaborating with the club directors and managers to ensure consistent, high-quality services. Prior to his current position, he spent three years with Sycamore Hills Golf Club as the executive chef. Raised by an Italian family with a passion for cuisine, Mr. Capua nurtured his lifelong love for food and began working in commercial kitchens as a teenager. Despite his love for cooking, he initially decided to pursue a career in the marine industry for four years. Seeking to then pivot his career, he secured work as a sous chef at Hammock Beach Resort in 2012 while simultaneously completing an American Culinary Federation apprenticeship through First Coast Technical College. Mr. Capua subsequently worked as the chef de cuisine at Hammock Beach Resort until 2016, at which point he joined Fiddlesticks Country Club Inc. as the executive sous chef. Reflecting on his fulfilling career, Mr. Capua is particularly proud to have started a resort and country club business, which currently ranks seventh nationwide in a field of more than 100 competitors. Despite operating in a small market, their innovative and modern approach proved successful, allowing them to expand and cement their reputation for excellence. Additionally, he is proud of his military service, having honorably served in the United States Marine Corps from 2008 to 2014. To commemorate his achievements, Club + Resort Chef recognized Mr. Capua among their Chef’s 40 Under 40 list in 2024. In the coming years, he aims to continue speaking at conferences, become a motivational speaker, and advocate for others in the food and beverage industry.
