Her professional career followed five years of service in the U.S. Army. Originally involved in human resources-related functions, her skill set led her to roles in psychological operations. She served as a drill instructor, leadership instructor and liaison to the German military unit in Fulda, Germany. Outside work, Dr. Lee was recently appointed to the United Nations’ Economic and Social Council, fulfilling a long-held dream. She is active with the Africana Women Working Group, which empowers women across African nations by providing water resources, delivering education on sustainable farming practices, and teaching strategies to maximize the nutritional value of meals. She is also committed to eliminating food insecurity both locally and globally. Reflecting on her career, Dr. Sandra Kay Lee attributes her success to her parents. Her father, a disciplined military leader, provided a sense of direction that inspired her to join the U.S. Army. Her mother instilled a sense of adventure, a characteristic that gave her the courage to explore countries, cultures and opportunities. Dr. Lee is the president and chief executive officer of Creative Dining Services, a contract catering food services company she joined in 2025. The organization provides food services for universities, independent K-12 schools, boarding schools, hotels and retreats, healthcare facilities and senior living facilities. It also offers corporate dining services for companies that provide food for their employees. Creative Dining Services boasts approximately 1,700 employees across 16 states and more than 70 partnerships. Dr. Lee is tasked with charting the company’s future direction and ensuring the organization maintains its focus on safety, operational excellence and consistent service delivery. Dr. Lee brings 25 years of hospitality industry experience to this venture. She previously served as the division president at Chartwells Higher Ed from 2022 to 2025, after advancing from regional vice president to senior vice president between 2017 and 2022.
