While he may not have known it at the time, he would go on to have a successful 17year career overseeing operations in some of the most exclusive casinos and working with wellknown celebrity chefs. Mr. Baer is the executive steward at Red Rock Resort, Casino and Spa in Las Vegas, a position he has held since 2017. He oversees all aspects of food and beverage operations without directly handling food or drinks. His day typically starts around 4 a.m. as he walks through the entire casino, including every kitchen and back-of-house area, to ensure everything is clean and that all equipment is functioning correctly. Red Rock Resort, Casino and Spa features more than a dozen dining options. Mr. Baer meets with his team to prepare them for the day and then with the general managers and chefs of each outlet to review their needs, including new equipment, plateware and linens. He spends the rest of his day organizing and managing operations. Mr. Baer’s father instilled in him the value of hard work and smart work. Equipped with discipline and the drive to improve, he quickly gained extensive experience in various roles, including front-of-house, back-of-house, management, chef and bartender. He worked as the general manager of Crackers & Co. Café from 2009 to 2011. Though he was initially unfamiliar with the steward position, Mr. Baer took the initiative to learn all about it when he was approached about a role with Chef Gordon Ramsay in Las Vegas. His determination landed him the position, and he worked as the executive steward at Paris Las Vegas Hotel and Casino and its sister property, Bally’s Las Vegas (now Horseshoe Las Vegas), operated by Caesars Entertainment, for five years, from 2011 to 2016. In addition to Chef Ramsay, Mr. Baer has worked with a number of celebrity chefs, including Giada De Laurentiis and Guy Fieri. Few people have the opportunity to meet chefs of this caliber, and he has found it to be an inspiring experience in the culinary world.
